I had a new type of Japanese food recently — that was not sushi!

Tamagoyaki!  This is a type of omelette that is made by layering eggs, vinegar, soy sauce, and any desired toppings.  At our restaurant, Abeno, the omelettes  were made at our table, hibachi-style.  I love when food preparation becomes entertainment!

The finishing touch were a several sauces (mayonnaise and soy-sauce based, I believe) which made the flavor of the eggs so rich, layered and delicious.  A wonderful, savory, complex but light meal!
